There`s not much you can do about being moved during online games. If you play on Merge sites it`s worth noting that the tables collapse numerically so if you`re at a table with a low number the likelihood is both you and your opponents will be there quite a while.
As for tells you`re really down to watching betting patterns and seeing what cards were shown-down (note that you can see hands that called but folded without showing by looking in the hand history).
You have to look for habits. If he raised pre-flop does he always continuation bet the flop or does he only fire when he has hit the flop. Does he always raise from a particular position when no-one else has entered the pot? Does he 3-bet a lot? etc
Do the bets make any sense? Usually hands tell a story through the betting. Take a hand I had not long ago.
I was dealt AK UTG and made a standard raise. Only one player calls, the button. I`d had a run in with him earlier and he had bluffed me off a pot. He`d pulled the same trick against several other people and he loved to show his bluffs.
The flop misses me and I check and he makes a minimum bet. I call.
The turn doesn`t help me either but doesn`t look like a card that would have helped him. Again I check and he min bets, I call.
The river is a 2 and again I check. This time he fires out a much larger bet, somewhere near 1/5th or a 1/4 of my stack.
I went into the tank for a while and finally called with nothing but AK high.
It was a good call, he had absolutely nothing and I won a nice pot. From his comments in chat he couldn`t believe I`d called.
It wasn`t an easy decision, he was the type of player who might play any 2 suited cards and might have made a low pair. But the story the hand told didn`t make sense. When this guy hit flops he was aggressive but on this occasion he was very cautious. Then after 2 minimum bets he makes a huge raise on a poor card? Add that to his frequently shown bluffs and I thought it was worth a call.
The only other possible tells are timing tells. How quickly a player reacts to a bet. There are problems with these though. A player might take a long time over a hand. Sometimes this is genuine indecision, a player doing the maths and working out if he should call. At other times it`s someone holding the nuts and trying to give that air of indecision. It could even be a player who is playing multiple tables and just hasn`t got to the table for a while because he`s involved in other hands.
As for if you switch tables. Yes switching to TAG until you have a feel for the table is probably the wisest option. If nothing else it will disguise your LAG play for a while at least.
